Cast Iron Striper

One of my favorite recipes is this easy to prepare delicious striper dish.

2 pounds fresh fillet of striped bass. Fillets should be around 1 inch thick. Make sure your fillets have ALL red meat removed from them. The fillets should be all white and no red.

1/2 stick unsalted butter
Lemon pepper
2 tbsp bacon bits
2 lemons
white rice
3 green onions
1/2 cup white wine

Rice - Make four servings of rice before you begin your fish cooking. Time your cooking so that you begin cooking your fish when the rice has about ten minutes left to cook.

Fish - Melt 1/2 stick of butter in a 10" iron skillet over medium heat. Add bacon bits to the butter and squeeze the juice from one lemon to the skillet. The pan should be hot, but not enough to brown the butter. Add fillets to the pan and cook for about three minutes per side. Generously sprinkle lemon pepper to each side of the fillet as you turn it. At this time your fish should be fully cooked (roughly 7 minutes). Add wine to the skillet. To finish add your chopped green onions to the pan and cook for an additional minute.

Serve immediately once your fish and rice are done. Scoop rice on to plate and place fish directly onto the rice. Add pan drippings to the rice and fish. This savory treat is ready to eat. serve with a chilled fruit forward white wine. Good choices for your wine pairing will be a chardonay or a pinot grigio. If you like soy sauce then try a Tamari style soy sauce like SANJ. The flavor of food comes out better with Tamari and is less salty tasting.
