HOGFISH TACOS

While in Florida I got the opportunity to sample this local favorite. It is a very mild fish with a white opaque color. The hogfish occurs from Bermuda to North Carolina South through the Caribbean Sea and Northern through the Gulf of Mexico. This fish can be found at the bottom of coral reefs and hard sand and rock bottoms. The hogfish can grow up to 3 feet and weigh up to 22 lbs.

One Medium Size Hogfish filleted
Corn Tortillas
One package Broccoli Slaw
Mexican Cheese Blend Shredded
Lime
Fresh Cilantro
Salt & Pepper to taste
Olive oil

In a medium size saute pan heat 1 tablespoon olive oil salt & pepper both sides of the hogfish fillet and put in hot skillet.

While hogfish is cooking in another saute pan heat 1 tsp olive oil and warm corn tortillas.

Cook hogfish each side up to 5 min on each side depending on fillet thickness.

Remove fish from pan and squeeze with fresh lemon.

Serve in warm tortilla with broccoli slaw, cheese, fresh cilantro and sour cream if you prefer.
